    Egg Soldiers is the UK’s leading food and hospitality consultancy. We work with start-ups through to some of the biggest brands in the food industry, across the UK, US and Europe. Our services range from food trends and insights, ideation workshop, full new concept creation, menu development and operational support.

    The business was founded in 2018 by Stefan Cosser and Toph Ford. Stefan’s background includes running the development kitchen at the 3 Michelin starred The Fat Duck restaurant. Toph’s background includes being Head of Food at Leon Restaurants – helping to grow the business from 4 to 40 sites.

    The business has grown to a team of 11 full time employees – ranging from development chefs, trend researchers, creatives and operational specialists.

    Revenue growth has been significant over the last 3 years and we are now on a steady path of growing our team and range of services.

    Our reputation is paramount to us and we rely on word of mouth and repeat clients.

    Since the beginning of 2022, the business has grown significantly in terms of revenue, team and services.

    Revenue – year on year revenue growth has been:

    • 2024 revenue is on track to grow 20% from 2023
       
    • 2023 revenue grew 42% on 2022.
       
    • 2022 revenue grew 73% on 2021.

    Team – we’ve gone from 4 employees to 11 since beginning of 2022.

    Services – we developed and launched a new customer facing sub-brand and offer, the ‘Insights Lab’. The Insights Lab is geared towards food manufacturers and retailers, where we support them with bespoke food trends reports, specialist-led creative ideation workshops and food study tours.

    This new service offer has broadened our customer base. Where our focus historically has been on hospitality businesses, we know that manufacturers and retailers look towards hospitality for inspiration and insights. By leveraging our expertise in hospitality, we can support manufacturers and retailer, helping them supercharge their innovation pipelines and creativity.

    Our achievements and our business is unique in the marketplace.

    The hospitality consulting industry is fragmented – there are a lot of one-man-band businesses offering menu development services or operational support. We have managed to build a ‘consulting agency’ style business that can encompass a wider range of services, resulting in better and more holistic services and results for our clients.

    This is also the case for our sub-brand, the Insights Lab. Whereas there are a number food trends agencies in the market, our USP is that we are not just trends researches, we are working in the industry, developing and creating the food trends. This unique chef-led vantage point allows us to take the food trend research further – giving our clients real, actionable ideas to develop. We can then work with the clients longer term, helping them develop products and dishes using the trends insights.
